  • 1 cup granulated sugar
  • ½ cup packed brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups finely grated carrots (about 4 medium carrots)
  • 1 cup crushed pineapple, drained
  • ½ cup chopped walnuts or pecans (optional)
  • ½ cup shredded coconut (optional)
  • 1 teaspoon vanilla extract

For the cream cheese frosting:

  • 8 oz (225 g) cream cheese, softened
  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions:

Step 1: Prepare the cake

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
  3. In a large bowl, beat together granulated sugar, brown sugar, and oil until smooth. Add the eggs one at a time, beating well after each addition.
  4. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  6. Fold in the grated carrots, crushed pineapple, and any optional ingredients like nuts or coconut.
  7. Divide the batter evenly between the prepared cake pans and smooth the tops.

Step 2: Bake

  1. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  2. Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

Step 3: Prepare the cream cheese frosting

  1. In a medium bowl, beat together the softened cream cheese and butter until smooth and creamy.
  2. Gradually add the powdered sugar, beating on low speed until combined.
  3. Add the vanilla extract and beat until the frosting is light and fluffy.

Step 4: Assemble and frost

  1. Once the cakes are completely cool, spread a layer of frosting on top of one cake layer.
  2. Place the second layer on top and frost the top and sides of the cake with the remaining cream cheese frosting.

Decorate with additional chopped nuts or a sprinkle of cinnamon if desired. Let the cake sit for a little while to allow the flavors to meld before serving. Enjoy your delicious carrot cake!
